Hi, I’m Ellie Bunston, founder and owner of Brighton-based cake studio Bunston Bakes. I create bespoke buttercream and ganache wedding cakes, as well as custom celebration cakes, each designed to add an extra-special touch to your event.

After using baking as a creative outlet alongside my 9–5 office job for several years, I finally took the leap in 2015 and turned my passion into a career - and so Bunston Bakes was born.

Originally working from my tiny kitchen in North London, it wasn’t long before the business outgrew the space. In 2016, I uprooted my life and moved both home and business to Brighton, and I’ve never looked back. I now bake from a light and airy kitchen overlooking my garden and the sea - a far cry from my previous cramped quarters in Hackney.

With nature as a constant source of inspiration, my designs are understated, elegant, and subtly stylish. Each cake has an informal yet refined feel, making them perfect for weddings and celebrations of all kinds.

I love incorporating floral elements into my cakes, as they provide a beautiful finishing touch and a seamless way to tie your cake into the overall look of your wedding day. Even the simplest designs are transformed into something effortlessly striking.

My flavour combinations are unique and carefully developed, with each one refined through extensive testing. My personal favourite is lemon and almond sponge with mascarpone frosting and lemon curd, while chocolate and salted caramel remains a firm crowd-pleaser.

With over 10 years’ experience as a professional baker, designing and creating wedding cakes is still the most rewarding part of my job. Being part of a couple’s big day is always an honour, and I never take for granted the trust placed in me to create their dream wedding cake.
